The Characteristics of Santoku Knives
Santoku is a Japanese word that means "three virtues" and refers to the knife's ability to slice, dice, and chop food. This versatility is reminiscent of the Japanese chef's knife with its unique characteristics.
The blade of a Santoku knife measures 10 to 20 cm long, making it lighter and easier to handle than a Western chef's knife. We also offer utility knives to complement your set. The edge of the Santoku knife is almost flat, and its tip is curved at a 60-degree angle. The Santoku knife typically has a hollowed-out blade, although this is not always the case. This creates tiny air bubbles inside the cells that prevent food from sticking to it.
The Santoku knife is comparable in size to a chef's knife but slightly smaller. The smaller blade of this knife makes it difficult to cut long foods. However, its maneuverability makes it a popular knife in both professional and amateur kitchens worldwide.
